The Fine Baking Co. began not in a boardroom, but at a kitchen counter in West Seattle — with a sourdough starter named after a local poet, a desire to slow down, and the stubborn belief that the best things cannot be rushed.
Today, we bake on California Avenue SW for our neighbors, our regulars, and the strangers who walk in smelling the butter and decide to stay. Every croissant is laminated by hand. Every batch of sourdough ferments overnight. We don't cut corners — we fold them, precisely, twenty-seven times.

We designed our space on California Avenue to feel like a living room that happens to serve extraordinary food. Light floods in from the west. The counter is marble, the chairs are worn in just the right places, and the coffee is pulled with the same care we give our dough.
